Matzo Bark

Sweet yet healthy matzo bark made with homemade date and peanut butter toffee, silky vegan chocolate, and sea salt – a quick, easy, moreish Passover treat!

  • 1 cup of medjool dates (or sub raisins)
  • ¼ cup of creamy or chunky peanut butter
  • 3 tablespoons of plant-based milk
  • 2 matzo crackers
  • 1 cup of vegan semi-sweet chocolate chips
  • Pinch of course salt (optional)

Instructions

  1. Soak the pitted dates for 30 minutes in piping-hot water.
  2. Drain the water and add the dates, peanut butter (if using), and plant-based milk into a food processor and blend until smooth.
  3. Spread the puréed date blend onto matzo crackers.
  4. Melt dairy-free chocolate in a double boiler or microwave and spread it over the puréed date blend on the matzo crackers. Optionally, sprinkle on course salt.
  5. Allow the dairy-free chocolate to cool completely (you can even put it in the freezer for a few minutes), and then break up the matzo crackers into large uneven pieces.

Notes

  • Use good-quality ingredients: For the best flavors, use high-quality Medjool dates, peanut butter, matza crackers, and vegan chocolate.
  • To break the bark: Use a knife for even-sized pieces or break it roughly into large shards.
  • Check labels: If you’re keeping kosher, make sure to check the labels of your chosen ingredients to ensure they bear an OU symbol.
