Meatball Potato Soup

Comforting slow cooker meatball potato soup has a mild flavor and is full of veggies! Use frozen meatballs for a quick dump and go dinner recipe.

Ingredients

  • 6 Medium Red Potatoes (peeled and chopped)
  • 15-20 frozen meatballs
  • 1 yellow onion (chopped)
  • 3 carrots (peeled and chopped)
  • 2 stalks of celery (chopped)
  • 2 teaspoons Worcestershire sauce 
  • salt and pepper to taste
  • 4 cups beef stock
  • 6 sprigs of fresh thyme

Instructions

  1. Chop all of the veggies.
  2. Add all of the ingredients into a slow cooker. Mix together and cover.
  3. Cook on high for 4 hours or low for 6-8 hours.
  4. Serve warm.

Notes

  • This soup is simply flavored, but if you'd like more flavor, try a couple cloves of garlic, Italian seasoning, a sprinkle of Parmesan cheese and a garnish of fresh parsley.
