Meatloaf Sandwich

Ingredients

  • 4 lices leftover meatloaf
  • 8 lices sourdough bread
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter softened
  • 4 lices cheddar cheese
  • sliced tomato
  • lettuce
  • salt and pepper to taste

Instructions

  1. Heat a large nonstick skillet over medium heat. Place the meatloaf slices in the skillet and cook until warmed through and lightly browned, about 3 minutes per side.
  2. Spread one side of each slice of bread with mayonnaise and the other side with butter. Place 4 slices of bread, buttered-side down, in the skillet.
  3. Top each slice of bread with a slice of cheese, a slice of warmed meatloaf, tomato slices, and lettuce. Season with salt and pepper to taste.
  4. Place the remaining slices of bread on top, buttered-side up. Grill the sandwiches until the bread is toasted and the cheese is melted, about 2-4 minutes per side.
  5. Remove from the skillet and let cool for a few minutes before serving.
