Mediterranean 7-Layer Dip
This Mediterranean 7-Layer Dip layers creamy tzatziki and hummus with fresh diced cucumbers, cherry tomatoes, green onions, crumbled feta, and optional parsley. The dip offers a variety of textures and flavors from smooth, tangy sauces to crisp vegetables and salty cheese. It's served chilled, allowing the flavors to meld before enjoying with pita chips.
Ingredients
Tzatziki
- 1 (8 ounce) cream cheese softened
- 1/2 /2 cup English cucumber peeled, seeded, and diced (save the other half for later)
- 3 garlic cloves minced
- 2 tablespoons yogurt plain, Greek
- 2 tablespoons lemon juice
- 1 tablespoons dill chopped (more to taste)
Hummus
- 2 (15 ounce) garbanzo bean drained with liquid reserved, canned
- 1/4 /4 cup garbanzo beans reserved liquid
- 1/4 /4 cup lemon juice
- 3 cloves garlic minced
- 2 tablespoons tahini found in condiment aisle
- 1 tablespoon olive oil
- 1 teaspoon kosher salt more to taste
- pinch pinch ground cumin
Other Toppings:
- 1 cup English cucumber peeled, seeded, and diced
- 1 cup cherry tomato quartered
- 1/3 /3 cup green onions sliced
- 1/4 /4 cup feta cheese crumbled
- (optional) (optional) flat parsley chopped, leaf
Instructions
Tzatziki:
- Mix all ingredients together with a mixer.
Hummus:
- Place all ingredients in a food processor and blend until smooth. Add more garbanzo bean liquid and process if you want it thinner.
Assembly:
- To assemble: Spread tzatziki sauce in the bottom of a shallow serving dish or pie plate. Spread hummus on top. Top with cucumber, tomatoes, onions, feta, and parsley.
- Refrigerate for 2 hours to let the flavors meld before serving. Serve with pita chips.
