Mediterranean Brown Rice Salad

A simple mediterranean brown rice salad loaded with cherry tomatoes, red onion, fresh parsley and feta cheese all tossed in a homemade red wine vinaigrette.

Ingredients

  • 3 cups cooked brown rice
  • 1 ½ cups cherry tomatoes chopped
  • 1 cup crumbled Feta cheese
  • ½ cup red onion diced
  • ½ cup parsley chopped
Dressing
  • ⅓ cup extra virgin olive oil
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper

Instructions

  1. Add all the dressing ingredients into a bowl and whisk until combined.
  2. In a large bowl, combine all of the salad ingredients, pour dressing over and stir to combine.
  3. Store in an airtight container for up to a week.
