Mediterranean Chicken Wraps
Mediterranean Chicken Wraps feature shredded cooked chicken mixed with crumbled feta, Greek yogurt, roasted red peppers, and olives, flavored with fresh lemon juice and zest. The filling is seasoned simply with salt and pepper, then rolled in flour tortillas layered with arugula or spinach. These wraps combine creamy, tangy, and fresh flavors in a handheld meal.
Ingredients
- 4 cups chicken cooked and shredded
- 4 ounces feta cheese about 1 cup, crumbled
- ½ cup yogurt plain, Greek
- ½ cup roasted red pepper patted dry and chopped, jarred
- ½ cup black olives chopped, or kalamata olives
- 1 teaspoon lemon zest fresh
- 2 teaspoons lemon juice fresh
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 flour tortilla white or whole wheat, 12-inch
- 4 ounces arugula about 4 cups, or spinach; baby
Instructions
- In a large bowl, combine the chicken, feta, yogurt, red peppers, olives, lemon zest, lemon juice, salt and pepper.
- Divide the arugula (or spinach) among the tortillas, spreading across the entire tortilla. Spoon the chicken mixture down the center of the tortilla (about 1/4 of the mixture for each tortilla if making 4 wraps), and roll up tightly.
- Use a serrated knife to slice in half. Serve.
Notes
- The filling is generous; you can make more wraps with less filling per wrap if preferred.
- Rotisserie chicken works well for this recipe, saving time on cooking and shredding chicken.
