Mediterranean Chicken Wraps

Mediterranean Chicken Wraps feature shredded cooked chicken mixed with crumbled feta, Greek yogurt, roasted red peppers, and olives, flavored with fresh lemon juice and zest. The filling is seasoned simply with salt and pepper, then rolled in flour tortillas layered with arugula or spinach. These wraps combine creamy, tangy, and fresh flavors in a handheld meal.

Description

Mediterranean Chicken Wraps blend cooked shredded chicken with tangy crumbled feta cheese and creamy Greek yogurt, complemented by roasted red peppers and chopped black or Kalamata olives. Fresh lemon zest and juice brighten the filling, while salt and pepper season it lightly. Placed on a bed of arugula or baby spinach inside large flour tortillas, the wraps balance creamy, savory, and fresh tastes with peppery greens.

The method simply involves mixing the filling and assembling the wraps, making the preparation straightforward. Slicing the wraps in half makes for easy serving. The chicken can be rotisserie or homemade, offering convenience.

These wraps serve well as a lunch, light dinner, or picnic food with their fresh, creamy, and portable qualities.

You can adjust filling quantity per wrap and make more wraps if desired. Using a store-bought rotisserie chicken expedites preparation.

Ingredients

Servings
  • 4 cups chicken cooked and shredded
  • 4 ounces feta cheese about 1 cup, crumbled
  • ½ cup yogurt plain, Greek
  • ½ cup roasted red pepper patted dry and chopped, jarred
  • ½ cup black olives chopped, or kalamata olives
  • 1 teaspoon lemon zest fresh
  • 2 teaspoons lemon juice fresh
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 flour tortilla white or whole wheat, 12-inch
  • 4 ounces arugula about 4 cups, or spinach; baby

Instructions

  1. In a large bowl, combine the chicken, feta, yogurt, red peppers, olives, lemon zest, lemon juice, salt and pepper.
  2. Divide the arugula (or spinach) among the tortillas, spreading across the entire tortilla. Spoon the chicken mixture down the center of the tortilla (about 1/4 of the mixture for each tortilla if making 4 wraps), and roll up tightly.
  3. Use a serrated knife to slice in half. Serve.

Notes

  • The filling is generous; you can make more wraps with less filling per wrap if preferred.
  • Rotisserie chicken works well for this recipe, saving time on cooking and shredding chicken.
