Mediterranean Chickpea Salad
This healthy Mediterranean Chickpea Salad is full of traditional Greek salad flavors, feta, tomatoes, cucumbers, olives and more!
Ingredients
- one (15/16 ounces can) chickpeas drained and rinsed
- 1 pint grape tomato washed and halved, or cherry tomato
- 1/2 cup kalamata olives drained, pitted
- 1 large cucumber washed and chopped, English
- 1/4 red onion finely sliced into half rings
- 1/2 green pepper washed, de-seeded and chopped
- 1/2 cup feta cheese cubed
- 1/4 cup olive oil
- 2-3 tablespoons Greek seasoning our favorite
Instructions
- In medium bowl,combine the chick peas, tomatoes, olives, cucumber, red onion, green pepper and Feta cheese.
- Drizzle the olive oil on top and then sprinkle with Greek seasoning to taste.
- Refrigerate until serving, but this is best served within a few hours.
