Mediterranean Chickpea Salad

This healthy Mediterranean Chickpea Salad is full of traditional Greek salad flavors, feta, tomatoes, cucumbers, olives and more!

Ingredients

  • one (15/16 ounces can) chickpeas drained and rinsed
  • 1 pint grape tomato washed and halved, or cherry tomato
  • 1/2 cup kalamata olives drained, pitted
  • 1 large cucumber washed and chopped, English
  • 1/4 red onion finely sliced into half rings
  • 1/2 green pepper washed, de-seeded and chopped
  • 1/2 cup feta cheese cubed
  • 1/4 cup olive oil
  • 2-3 tablespoons Greek seasoning our favorite

Instructions

    Cup of Yum
  1. In medium bowl,combine the chick peas, tomatoes, olives, cucumber, red onion, green pepper and Feta cheese.
  2. Drizzle the olive oil on top and then sprinkle with Greek seasoning to taste.
  3. Refrigerate until serving, but this is best served within a few hours.
