Mediterranean Chickpea Salad

Ingredients

  • 1 garbanzo beans 15-oz can, drained and rinsed
  • 1 cucumber chopped (2 cups, medium-sized
  • 2 cups cherry tomato halved
  • ¼ red onion thinly sliced (½ cup)
  • ⅔ cup feta cheese
Dressing:
  • 2 Tbsp avocado oil
  • 1 Tbsp lemon juice
  • 2 cloves garlic minced
  • ½ tsp salt to taste, sea salt
  • ¼ tsp black pepper
  • ½ tsp oregano dried

Instructions

  1. Drain and rinse the garbanzo beans and pat them dry with a paper towel.
  2. Transfer the garbanzo beans to a large bowl along with the cucumber, cherry tomatoes, onion and feta cheese.
  3. In a measuring cup or small bowl, whisk together the ingredients for the dressing.
  4. Pour the dressing over the salad and toss until everything is well-coated. Taste the chickpea salad for flavor and add more salt, lemon juice or feta cheese to your personal taste.
  5. Serve immediately or store in an airtight container in the refrigerator. Leftover salad will stay fresh in the refrigerator for up to 5 days.
