Mediterranean Chickpea Salad
Description
The Mediterranean Chickpea Salad brings together garbanzo beans, chopped cucumber, halved cherry tomatoes, thinly sliced red onion, and crumbled feta cheese in a bowl. The dressing is a simple blend of avocado oil, fresh lemon juice, minced garlic, salt, black pepper, and dried oregano. Tossing the salad with the dressing coats the ingredients evenly, enhancing each component's natural flavors. The salad is served fresh, retaining a crisp texture from the vegetables and a creamy tang from the feta.
The garlic and oregano in the dressing add a gentle herbal note that complements the robust feta and the sweet acidity of the tomatoes. The combination is light but filling, making it a suitable dish to serve as a quick lunch or alongside grilled meats and pita bread for a Mediterranean-inspired meal.
Since the salad can be stored in an airtight container in the refrigerator, it makes for convenient meal prep with leftovers lasting up to five days. Adjust seasoning after tossing to ensure a balance that suits your preference.
