Ingredients
Salad
- 30 oz canned chickpeas drained and rinsed
- 1 cup fresh parsley finely chopped
- 1/2 red onion finely diced
- 1 English cucumber diced
- 1 bell pepper chopped
- 2 cups cherry tomatoes halved
- 1 cup feta cheese crumbled
Dressing
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp ground black pepper
Instructions
- Combine all salad ingredients in a bowl.
- Combine salad dressing in a jar, cover with a lid, then shake until well combined.
- Add dressing to the salad, toss together, and enjoy.
