Mediterranean Corn Salad Recipe

This Mediterranean corn salad is easy, delicious ready in 10 minutes!. Drizzled with a zesty dressing, this is the perfect summer salad!

Ingredients

  • 1 can Libby’s Whole Kernel Sweet Corn 
  • 1 can Libby’s Sliced Carrots
  • 1/3 cup roasted red peppers cut into small pieces
  • 1/3 cup parsley chopped
  • 1/2 cup green olives
Dressing
  • 1/4 cup lemon juice freshly squeezed
  • 3 tbsp olive oil extra virgin
  • 1 tsp Aleppo pepper
  • 1/2 tsp salt

Instructions

  1. Place the corn, carrots, chopped roasted peppers, olives and parsley in a large bowl. Combine the ingredients using a large spoon.
  2. Make the dressing by mixing lemon juice, olive oil, Aleppo pepper and salt in a small jar.
  3. Pour over the salad and mix well.
  4. Cover and refrigerate for 30 minutes for the flavors to combine.
  5. Serve cold.

Notes

  • In case you don't have Aleppo pepper, use chili pepper flakes. 
  • To make this salad ahead of time, mix all the salad ingredients in a bowl, cover and refrigerate. Keep the dressing separately and mix it with the salad right before serving.
  • You can serve this salad with kebabs, grilled chicken or fish.
