Mediterranean Hummus Pizza without Cheese (+ Multiple Topping Options)

The hummus fills the void of the creaminess you get from vegan cheese and makes for the perfect pizza. It's also a very healthy option, and does not even come close to the amount of calories and fat in a normal pizza. Enjoy!

Ingredients

  • 1 pizza crust homemade or storebought
  • ¼-½ cup of Hummus or to cover crust
  • 1 bell pepper green or red, sliced
  • 1 tomato diced
  • 1 can of artichoke hearts in water 14 ounce, drained
  • ½ cup of baby spinach or other baby greens

Instructions

  1. Prepare pizza crust according to the directions.
  2. Spread hummus on pizza crust.
  3. Spread veggies over the hummus.
  4. Slice and enjoy!

Notes

  • Adjust the amount of hummus used: Based on how thick you want it to be.
  • Experiment with the ‘crust: This Mediterranean veggie pizza is super versatile. As well as using regular pizza dough or making a hummus flatbread pizza, you could even use pita bread or even a tortilla (brushed lightly with oil and heated in a pan until crisp). Use whatever you have to hand!
  • Chop the vegetables into bite–sized pieces: That way, they’ll adhere to the hummus better, and the hummus flatbread pizza will be easier to eat.
  • Customize the topping as preferred: There are so many toppings that pair with the hummus topping, so experiment and find your favorite combination.
