The hummus fills the void of the creaminess you get from vegan cheese and makes for the perfect pizza. It's also a very healthy option, and does not even come close to the amount of calories and fat in a normal pizza. Enjoy!

- 1 pizza crust homemade or storebought
- ¼-½ cup of Hummus or to cover crust
- 1 bell pepper green or red, sliced
- 1 tomato diced
- 1 can of artichoke hearts in water 14 ounce, drained
- ½ cup of baby spinach or other baby greens

- Prepare pizza crust according to the directions.
- Spread hummus on pizza crust.
- Spread veggies over the hummus.
- Slice and enjoy!

- Adjust the amount of hummus used: Based on how thick you want it to be.
- Experiment with the ‘crust: This Mediterranean veggie pizza is super versatile. As well as using regular pizza dough or making a hummus flatbread pizza, you could even use pita bread or even a tortilla (brushed lightly with oil and heated in a pan until crisp). Use whatever you have to hand!
