Mediterranean Pasta Salad
Mediterranean Pasta Salad is loaded with fresh ingredients and tossed in a delicious dressing. Make this pasta salad for your next BBQ.
Ingredients
For the Pasta Salad:
- 1 Pound rotini pasta
- 1 English cucumber diced
- 1 cup cherry tomato halved
- 1/2 cup black olives sliced, pitted
- 1/2 cup green olives sliced, pitted
- 1/4 red onion thinly sliced
- 4 ounces feta cheese
For the Dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 lemon juiced
- 1 teaspoon garlic powder
- 1 teaspoon oregano dried
- 1 teaspoon basil dried
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the pasta based on the package instructions to al dente. Drain the pasta and rinse under cold water to cool the pasta.
- Whisk together all the dressing ingredients in a small bowl and set aside.
- Place the cooked pasta in a large mixing bowl. Gently stir in all the remaining ingredients except for the feta cheese.
- Drizzle the dressing on top of the pasta salad. Gently toss the ingredients to coat with the dressing.
- Refrigerate for 1 hour.
- When serving, top with the feta cheese and enjoy!
Notes
- Refrigerate the leftovers covered for up to 3 days.
