Mediterranean Pasta Salad

Ingredients

For the Pasta Salad:
  • 1 Pound rotini pasta
  • 1 English cucumber diced
  • 1 cup cherry tomato halved
  • 1/2 cup black olives sliced, pitted
  • 1/2 cup green olives sliced, pitted
  • 1/4 red onion thinly sliced
  • 4 ounces feta cheese
For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 lemon juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta based on the package instructions to al dente.  Drain the pasta and rinse under cold water to cool the pasta.
  2. Whisk together all the dressing ingredients in a small bowl and set aside.
  3. Place the cooked pasta in a large mixing bowl.  Gently stir in all the remaining ingredients except for the feta cheese.
  4. Drizzle the dressing on top of the pasta salad.  Gently toss the ingredients to coat with the dressing.
  5. Refrigerate for 1 hour.
  6. When serving, top with the feta cheese and enjoy!

Notes

  • Refrigerate the leftovers covered for up to 3 days.
