Mediterranean Rice Pilaf
Mediterranean Rice Pilaf combines long grain white rice with onion, garlic, and turmeric cooked in chicken broth, finished with toasted pine nuts and fresh parsley. The pilaf has a tender, fluffy texture enhanced by the subtle earthiness of turmeric and the richness from butter and olive oil. Toasted nuts add a crunchy contrast. This pilaf works well as a side dish to complement roasted or grilled meats and vegetables.
Ingredients
- 1 cup long grain white rice
- 1 onion diced, medium
- 1 teaspoon Turmeric
- 1 clove garlic minced
- 1 Tablespoon butter
- 2 Tablespoons olive oil
- 2 cups chicken broth or vegetable broth
- 1/2 cup pine nuts toasted or slivered almonds
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper more to taste
- 2-3 Tablespoons parsley fresh chopped for garnish
Instructions
- Heat oil and butter in a sauce pan over a medium heat. Add onions, and sauté 2-3 minutes, Add rice, turmeric and garlic, and continue stirring, 2 to 3 minutes. Don't let garlic burn

- Add broth and 1/2 teaspoon kosher salt and pepper. Bring to a boil. Turn down heat to low, cover and cook rice until tender and liquid is absorbed, about 15-18 minutes.
- Lightly toast pine nuts until golden brown
- Stir in toasted pine nuts or almonds and adjust seasoning to taste. Garnish with fresh chopped parsley.
