Mediterranean Sheet Pan Shrimp
Mediterranean Sheet Pan Shrimp combines jumbo shrimp with fresh zucchini, cherry tomatoes, artichoke hearts, red onion, and Kalamata olives, roasted together with olive oil and aromatic spices. The roasted vegetables and shrimp are finished with crumbled feta cheese, offering a savory, balanced mix of textures and flavors. This one-pan recipe simplifies preparation and cleanup while delivering a Mediterranean-inspired meal.
Ingredients
- 1 ½ pounds Shrimp peeled and deveined, jumbo
- 1 zucchini cut into half moons, small
- 1 cup cherry tomato
- 12 ounce artichoke hearts halved, jarred
- ⅓ red onion sliced
- ⅓ cup kalamata olives
- ¼ cup feta cheese crumbled
- 2 ½ tablespoons olive oil
- 1 teaspoon oregano dried
- 1 teaspoon smoked paprika
- 1 teaspoon garlic salt
- ¼ teaspoon black pepper ground
Instructions
- Preheat oven to 425°F.
- Add the shrimp, zucchini, red onion, artichoke hearts, tomatoes and olives in a large mixing bowl.
- Pour the olive oil over the top, then sprinkle the garlic salt, smoked paprika, pepper and oregano over the top.
- Mix until well combined, making sure everything is well coated in the olive oil and spices.
- Pour onto a baking sheet that’s been brushed with olive oil.
- Bake for 8 minutes on the upper ⅓ rack of your oven. Then increase the temperature to 450°F and roast for another 3-5 minutes or until everything is cooked through.
- Serve with the feta cheese crumbled over the top.
