Description

The shrimp and vegetables are tossed in olive oil, dried oregano, smoked paprika, garlic salt, and black pepper, coating each ingredient with a fragrant spice blend. The mixture is spread on a lightly oiled sheet pan and roasted initially at 425°F, then at 450°F to ensure the shrimp cook through and the vegetables caramelize slightly.

This roasting method allows the shrimp to remain tender and juicy while the vegetables retain some bite and develop a smoky, slightly sweet flavor from the paprika. The Kalamata olives add a briny note, complemented by the creamy, tangy feta sprinkled on top at serving.

  • 1 ½ pounds Shrimp peeled and deveined, jumbo
  • 1 zucchini cut into half moons, small
  • 1 cup cherry tomato
  • 12 ounce artichoke hearts halved, jarred
  • red onion sliced
  • cup kalamata olives
  • ¼ cup feta cheese crumbled
  • 2 ½ tablespoons olive oil
  • 1 teaspoon oregano dried
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Preheat oven to 425°F.
  2. Add the shrimp, zucchini, red onion, artichoke hearts, tomatoes and olives in a large mixing bowl.
  3. Pour the olive oil over the top, then sprinkle the garlic salt, smoked paprika, pepper and oregano over the top.
  4. Mix until well combined, making sure everything is well coated in the olive oil and spices.
  5. Pour onto a baking sheet that’s been brushed with olive oil.
  6. Bake for 8 minutes on the upper ⅓ rack of your oven. Then increase the temperature to 450°F and roast for another 3-5 minutes or until everything is cooked through.
  7. Serve with the feta cheese crumbled over the top.
