Ingredients
- 20 ounces albacore tuna (wild caught) in water
- ½ English cucumber diced
- ⅓ red bell pepper diced
- ⅓ cup yellow bell pepper diced
- ⅓ cup kalamata olives quartered
- ⅓ cup feta cheese crumbled
- ¼ cup red onion diced
- ½ batch Lemon Vinaigrette
- 1 tablespoon fresh parsley chopped
Instructions
- Prepare the lemon vinaigrette and allow to sit at room temperature while you make the salad.
- Drain and rinse the tuna, then flake it apart to break it up. Add it to a large mixing bowl.
- In the same bowl, add in the cucumber, red and yellow bell pepper, red onion, parsley and Kalamata olives.
- Pour the lemon vinaigrette over the top and gently toss to combine.
- Crumble the feta cheese over the top and serve.
