Mediterranean Tuna Salad

Loaded with fresh vegetables, feta and albacore, then tossed with a light and refreshing vinaigrette, give this tuna amazing robust flavors!

Ingredients

  • 20 ounces albacore tuna (wild caught) in water
  • ½ English cucumber diced
  • ⅓ red bell pepper diced
  • ⅓ cup yellow bell pepper diced
  • ⅓ cup kalamata olives quartered
  • ⅓ cup feta cheese crumbled
  • ¼ cup red onion diced
  • ½ batch Lemon Vinaigrette
  • 1 tablespoon fresh parsley chopped

Instructions

  1. Prepare the lemon vinaigrette and allow to sit at room temperature while you make the salad.
  2. Drain and rinse the tuna, then flake it apart to break it up. Add it to a large mixing bowl.
  3. In the same bowl, add in the cucumber, red and yellow bell pepper, red onion, parsley and Kalamata olives.
  4. Pour the lemon vinaigrette over the top and gently toss to combine.
  5. Crumble the feta cheese over the top and serve.
