Ingredients

  • 3 tbsp olive oil
  • 1 onion diced
  • 4 garlic cloves minced
  • 2 cups rice basmati or other long, medium, or short-grain rice
  • 1 cup water
  • 2 cups broth chicken or vegetable
  • 1 tsp Turmeric
  • salt to taste
  • 3 tbsp parsley chopped
  • Zest of 1 lemon
  • 3-4 tbsp lemon juice

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add the onion and cook for 2 minutes. Add the garlic and cook for 2 more minutes, until the onions are translucent and sweet, and the garlic is fragrant and starting to brown.
  2. Add the rice and stir until it turns mostly translucent.
  3. Pour in the broth and water. Cover with a lid. When it reaches a simmer, reduce the heat to low.
  4. Cook for 12 minutes or until all the water is evaporated.
  5. Remove from heat and let it rest, covered, for 10 minutes.
  6. Remove the lid and stir in the lemon zest, lemon juice, parsley, and salt to taste.
