Ingredients
- 3 tbsp olive oil
- 1 onion diced
- 4 garlic cloves minced
- 2 cups rice basmati or other long, medium, or short-grain rice
- 1 cup water
- 2 cups broth chicken or vegetable
- 1 tsp Turmeric
- salt to taste
- 3 tbsp parsley chopped
- Zest of 1 lemon
- 3-4 tbsp lemon juice
Instructions
- In a large saucepan, heat olive oil over medium heat. Add the onion and cook for 2 minutes. Add the garlic and cook for 2 more minutes, until the onions are translucent and sweet, and the garlic is fragrant and starting to brown.
- Add the rice and stir until it turns mostly translucent.
- Pour in the broth and water. Cover with a lid. When it reaches a simmer, reduce the heat to low.
- Cook for 12 minutes or until all the water is evaporated.
- Remove from heat and let it rest, covered, for 10 minutes.
- Remove the lid and stir in the lemon zest, lemon juice, parsley, and salt to taste.
