Mediterranean Zucchini, Tomato and Feta Salad
A bright Mediterranean salad blending thinly sliced zucchini and yellow squash with juicy cherry tomatoes, kalamata olives, and crumbled feta cheese. Ingredients
- 2 zucchini thinly sliced into half moons, medium sized
- 2 yellow squash thinly sliced into half moons, medium sized
- 1 cup cherry tomato halved
- 1/4 cup kalamata olives chopped
- 2 ounces feta cheese cubed or crumbled
- 1 tablespoon basil chopped, fresh
- 1 tablespoon mint chopped, fresh
- 1 teaspoon lemon zest
- 3 tablespoons lemon juice fresh
- 1 tablespoon olive oil
- 1/4 teaspoon granulated garlic
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
Instructions
- In a large serving bowl whisk together the lemon zest, juice, olive oil, granulated garlic, salt and pepper.
- Add all of the ingredients to the bowl and gently toss to coat them in the lemon dressing. Taste for seasoning and serve.
