  • 2 yellow squash thinly sliced into half moons, medium sized
  • 1 cup cherry tomato halved
  • 1/4 cup kalamata olives chopped
  • 2 ounces feta cheese cubed or crumbled
  • 1 tablespoon basil chopped, fresh
  • 1 tablespoon mint chopped, fresh
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice fresh
  • 1 tablespoon olive oil
  • 1/4 teaspoon granulated garlic
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste

Instructions

  1. In a large serving bowl whisk together the lemon zest, juice, olive oil, granulated garlic, salt and pepper.
  2. Add all of the ingredients to the bowl and gently toss to coat them in the lemon dressing. Taste for seasoning and serve.
