Mee Goreng

Ingredients

  • 10 oz. egg noodles
  • 4 tablespoons Sriracha sauce
  • 2 limes , squeezed
  • ¾ cup kecap manis (sweet soy sauce)
  • 5 tablespoons light soy sauce
  • 2 tablespoons sunflower oil
  • 1 lb boneless chicken thighs (or filets), cut into ¾ inch (2 cm) cubes
  • 3 cloves garlic , chopped
  • 4 eggs , lightly beaten
  • 8 scallions , thinly sliced
  • 1 lb bok choy , thinly sliced
  • 8 oz. bean sprouts
To serve
  • 2 scallions , chopped
  • crispy fried onions
  • sambal
  • 1 red hot pepper , thinly sliced

Instructions

  1. Cook noodles according to package directions, then drain and rinse immediately in cold water. Set aside.
  2. In a bowl, combine the sriracha sauce, the juice of the limes, the kecap manis and the soy sauce and set aside.
  3. Heat the oil in a large wok over medium heat.
  4. Cook the chicken, stirring occasionally, for 6 to 7 minutes or until cooked through.
  5. Add the garlic, mix well, then transfer to a bowl and set aside.
  6. Wipe the wok lightly with paper towels, then set it on high heat.
  7. Add the eggs and cook, stirring, for 2 minutes or until just cooked through.
  8. Add the scallions, bok choy, cooked noodles and chicken and the sriracha mixture.
  9. Sauté, stirring constantly, for 2 minutes, until heated through and all the ingredients are coated with sauce.
  10. Add the bean sprouts at the last minute and mix.
  11. Divide into large bowls and garnish with fried onions, sambal, hot pepper and scallions. Serve immediately.
