Menemen (Turkish scrambled eggs)

Ingredients

  • 1 small onion or less if large
  • 1 wax pepper aka banana pepper, or ½ green bell pepper (see notes)
  • 1 tomato (large) or 2 if smaller
  • 1 tablespoon oil (olive oil best but as you prefer)
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon oregano
  • 2 eggs
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Dice the onion, pepper and tomato relatively small.
  2. Warm the oil in a small skillet and add the onion and pepper. Cook a couple minutes until the onion softens.
  3. Add the tomato, cumin, paprika, oregano, salt and pepper and cook for a few minutes so everything softens together. The tomato should become pretty sauce-like.
  4. Add the eggs to the skillet and stir so that the eggs break up, mix in and start to cook. Take off the heat a little before the egg is fully cooked (there should still be a good amount uncooked) as they will continue to cook after it is off the heat.
