Mexican Atole

An easy Mexican Atole recipe for the classic creamy beverage made with masa harina, cinnamon, and unrefined cane sugar. Ready in 20 minutes!

Ingredients

  • 6 cups water
  • 2/3 cup masa harina , corn flour
  • 1 1/2 tablespoons cinnamon
  • 1/2 cup piloncillo , highly preferred or use packed brown sugar
  • 1 tablespoon vanilla extract
  • 4 cinnamon sticks , for serving

Instructions

  1. To your blender add the water, masa harina, cinnamon and piloncillo. Note: the piloncillo is very important to the authenticity of this recipe, so if possible use this.
  2. Blend until smooth, for 2 minutes.
  3. Add the harina mixture to a large saucepan on medium heat.
  4. Bring to a boil, reduce heat to medium-low and cook for 8-10 minutes, whisking frequently.
  5. Remove from the heat, add in vanilla extract and whisk well.
  6. Pour into mugs and serve with cinnamon sticks and a grating of the piloncillo on top.
