Mexican black bean salad with juicy mango, hearty black beans, tomato and cilantro. The dressing made from garlic, avocado oil, and a splash of lime

Ingredients

  • ½ ½ can black beans
  • 1 1 tbsp avocado oil
  • 1 1 Mango
  • 2 2 tomatoes or 2 handsful of cherry tomatoes
  • ½ ½ red onion
  • 1 1 clove garlic
  • 2 2 limes
  • 1 1 tsp chili flakes
  • ½ ½ teaspoons paprika powder
  • 1 1 tbsp maple syrup

Instructions

  1. Chop the tomatoes and the mango. Chop the onion very fine and mix with the beans.
  2. Press the garlic. Mix the juice of a lemon, the maple syrup and (if you use it) the avocado oil. Mix in the paprika powder and chili flakes. Mix through the salad.
  3. Chop or tear the cilantro and mix.
