Ingredients

  • 1 cup corn kernels fresh or frozen
  • 4 cups chopped romaine lettuce
  • 1 cup Grape or Cherry Tomatoes halved
  • 1 cup canned black beans rinsed and drained
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/3 cup red onion diced
  • 1/4 cup fresh cilantro chopped
For the Dressing:
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons honey
  • 1 clove garlic minced
  • salt and black pepper to taste
  • 1/3 cup crumbled feta or cotija cheese optional, for garnish

Instructions

  1. If using frozen corn, thaw it; if using fresh corn, cook it if needed.
  2. In a large bowl, combine the chopped lettuce, tomatoes, black beans, corn, bell pepper, avocado, red onion, and cilantro.
  3. In a smaller bowl, whisk together the lime juice, olive oil, honey, minced garlic, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Sprinkle with crumbled feta or cotija cheese if using, and serve immediately.
