Mexican Corn and Green Chile Dip

Ingredients

  • 16 ounce bag frozen fire roasted corn, defrosted
  • 1/2 cup canned diced green chiles, or fire roasted green chiles
  • 3 green onions, sliced thin
  • 1/2 cup cilantro, chopped (optional)
  • 1 cup Crumbled queso fresco
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 cup plain greek yogurt
  • 3 tablespoons mayonnaise
  • 1/2 of a lime juiced
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. In a large bowl combine the corn, green chiles, onions, cilantro, queso fresco and spices.
  2. In a separate bowl whisk together the Greek yogurt, mayonnaise and lime juice. Pour over the corn mixture and stir together until combined. Taste for seasoning and add salt and pepper as needed. Top with extra queso fresco and serve with tortilla chips.

Notes

  • The dip can be made a day in advance if needed.
  • If you can't find fire roasted corn (I've bought it at Whole Foods and Trader Joe's) regular frozen corn can be used.
