Ingredients

  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 1 tablespoon taco seasoning
  • 1 cup frozen corn thawed
  • 1 14.5-ounce can diced tomatoes, drained
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 cup shredded cheddar cheese

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until beef is browned and onions are soft. Drain off any excess fat.
  3. Stir the taco seasoning, corn, and diced tomatoes into the beef mixture. Spread evenly in the prepared baking dish.
  4. In a bowl, mix flour, cornmeal, baking powder, and salt. Add milk, egg, and oil; stir until just combined. Fold in half of the cheese.
  5. Spoon the cornbread batter over the beef layer in the dish. Sprinkle with remaining cheese.
  6. Bake for 25 to 30 minutes, or until the cornbread topping is golden and a toothpick inserted into the center comes out clean.
