Mexican Rice Recipe
Mexican Rice is a golden, fluffy side made by toasting long-grain white rice in oil, then cooking it with tomato sauce, vegetable stock, and seasonings. The rice absorbs the flavorful liquid while simmering until tender, resulting in a savory, slightly spiced dish garnished with fresh cilantro, diced tomato, and lime wedges.
Ingredients
- 3 tablespoons neutral cooking oil generic cooking oil
- 2 cups long-grain white rice
- 8 ounces tomato sauce
- 3 cups vegetable stock
- 1 teaspoon garlic minced
- ½ teaspoon cumin
- ¼ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Heat the oil in a large skillet over medium heat.
- Add the rice and gently stir for about 8-10 minutes until the rice starts to brown and looks golden in color.
- Add the tomato sauce, vegetable stock, garlic, cumin, salt and pepper to the skillet. Give the mixture a stir.
- Cover and bring to a simmer for 15-25 minutes or until the rice is cooked and the liquid is absorbed.
Notes
- Adjust the amount of vegetable stock depending on the rice type; some require 2 cups of liquid per cup of rice, others 1.5 cups.
- Garnish with fresh cilantro, diced tomato, and lime wedges to enhance the flavor and presentation.
