Mexican Rice Recipe

Mexican Rice is a golden, fluffy side made by toasting long-grain white rice in oil, then cooking it with tomato sauce, vegetable stock, and seasonings. The rice absorbs the flavorful liquid while simmering until tender, resulting in a savory, slightly spiced dish garnished with fresh cilantro, diced tomato, and lime wedges.

Description

The Mexican Rice Recipe begins with gently browning long-grain white rice in cooking oil until golden, which adds a toasted aroma and prevents mushiness. Tomato sauce and vegetable stock are combined with garlic, cumin, salt, and black pepper to create a subtly spiced cooking liquid that infuses the rice with color and flavor during simmering.

Simmered covered for 15 to 25 minutes until the liquid is absorbed, the rice becomes tender with a vibrant, slightly tangy tomato foundation accented by warming cumin and fresh garlic. Finished with chopped cilantro, diced tomato, and lime wedges, it offers brightness and a fresh contrast to the heartier cooked grains. This rice can accompany a variety of Mexican-inspired meals or serve as a flavorful base for other dishes.

Note that liquid amounts may vary by rice type; adjusting vegetable stock quantity according to rice package instructions ensures proper cooking.
