Mexican Taco Breakfast Burrito

Ingredients
- 1 lb ground beef
- 1 onion diced
- 4 cloves garlic minced
- 1 tablespoon taco seasoning
- 1 jalapeño diced
- 8 egg large
- 1/3 cup half and half
- 4 tablespoons butter unsalted
- salt to taste
- black pepper to taste
- 4 flour tortilla large
- 1 cup cheddar cheese shredded
- 1 cup American cheese
- 1 tomato diced, large
- 1 avocado diced
- 1 cup refried beans
- hot sauce for serving
Instructions
- Place a large skillet over medium heat and once hot, cook ground beef, until no longer pink. Drain any excess fat.
- Add onion, garlic, jalapeno, salt, pepper, and taco seasoning. Cook until the beef is browned.
- In a medium bowl, whisk together eggs and half and half.
- Wipeout the skillet, place over medium heat and melt the butter. When butter is just starting to foam, reduce heat to medium-low and add beaten eggs. Using a rubber spatula, stir every occasionally until soft curds form. Season with salt and pepper to taste.
Assemble:
- In the center of each tortilla, spread ¼ cup of refried beans, add ¼ of the ground beef, ¼ of the scrambled eggs, ¼ cup of each cheese, and tomato pieces and avocado.
- Fold in the two sides and roll up tightly. Serve with hot sauce.
