  • 1 lb ground beef
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 tablespoon taco seasoning
  • 1 jalapeño diced
  • 8 egg large
  • 1/3 cup half and half
  • 4 tablespoons butter unsalted
  • salt to taste
  • black pepper to taste
  • 4 flour tortilla large
  • 1 cup cheddar cheese shredded
  • 1 cup American cheese
  • 1 tomato diced, large
  • 1 avocado diced
  • 1 cup refried beans
  • hot sauce for serving

Instructions

  1. Place a large skillet over medium heat and once hot, cook ground beef, until no longer pink. Drain any excess fat.
  2. Add onion, garlic, jalapeno, salt, pepper, and taco seasoning. Cook until the beef is browned.
  3. In a medium bowl, whisk together eggs and half and half.
  4. Wipeout the skillet, place over medium heat and melt the butter. When butter is just starting to foam, reduce heat to medium-low and add beaten eggs. Using a rubber spatula, stir every occasionally until soft curds form. Season with salt and pepper to taste.

Assemble:

  1. In the center of each tortilla, spread ¼ cup of refried beans, add ¼ of the ground beef, ¼ of the scrambled eggs, ¼ cup of each cheese, and tomato pieces and avocado.
  2. Fold in the two sides and roll up tightly. Serve with hot sauce.
