Making peanut brittle can be a holiday tradition. It's easy to make peanut brittle in a microwave and proves candy making doesn't have to be difficult.

Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 cups peanuts or nuts of your choice
- 1 tablespoon butter or margarine
- 1 teaspoon baking soda

Instructions
- Combine the sugar and corn syrup until all of the sugar is wet. Microwave for 4 minutes on high.
- Add the vanilla, nuts, and butter or margarine, and microwave for an additional 4 minutes on high.
- Quickly stir in 1 teaspoon baking soda, and pour the mixture on a greased cookie sheet. Being quick is imperative.
- After it has cooled and hardened, break it up into pieces.
Notes
- The name of the game is quickness for this recipe. You need to move fast with all of the steps so the brittle doesn't harden before you spread it out on the baking sheet.
- Ingredient Substitutions
- You can substitute coconut sugar for the sugar.
- To make brittle without corn syrup, you can substitute it with golden syrup or maple syrup.
