Ingredients

  • 1 teaspoon butter
  • 4 large eggs
  • 2 tablespoons whole milk or heavy cream
  • Pinch salt & pepper
  • ¼ cup shredded cheddar cheese; optional

Instructions

  1. Microwave the butter in a small microwave-safe bowl until just melted. Brush it all over the bowl.
  2. Crack eggs into the bowl then whisk in the milk and a generous pinch of salt and pepper.
  3. Microwave the eggs, uncovered, for 30 seconds. Gently give them a stir with a fork then add in a small handful of cheese if desired.
  4. Microwave for an additional 45 seconds or until fluffy and almost set. Serve immediately!
