Microwave Strawberry Protein Mug Cake

Ingredients

For the cake:
  • 3 tablespoons white whole wheat flour
  • 1 tablespoon strawberry protein powder
  • 1/4 teaspoon baking powder
  • Pinch salt
  • 4 teaspoons honey
  • 1/2 tablespoon coconut oil
  • 2 teaspoons Greek yogurt vanilla flavor
  • 1 1/2 tablespoons almond milk unsweetened vanilla
Topping options:
  • cream cheese used as frosting
  • 1 tablespoon cream cheese reduced-fat, softened
  • 1 tablespoon strawberry protein powder
  • 1 teaspoon Greek yogurt vanilla flavor
  • Truvia to taste or sweetener of choice
Freek yogurt "frosting:
  • 2 tablespoons Greek yogurt vanilla flavor
  • 2 tablespoons strawberry protein powder
  • Truvia to taste or sweetener of choice

Instructions

    Cup of Yum
  1. In a medium bowl, stir together the white whole wheat flour, protein powder, baking powder and salt. Set aside.
  2. In a small, microwave safe bowl, melt the honey and coconut oil in the microwave (about 30 seconds.)
  3. Make a well in the center of the dry ingredients and pour in the honey mixture, Greek yogurt and almond milk. Stir until smooth and well combined.
  4. Lightly spray a mug (mine was 12 oz) with cooking spray and pour the batter in. Microwave for 1 minute and 10 seconds, watching the microwave closely to make sure that your cake isn't exploding.
  5. Let cool for 1 minute and stir together topping of choice in a small bowl.
  6. Top with "frosting" and DEVOUR

Notes

  • Microwave times vary; start with 1 minute and 10 seconds on 1000-watt microwaves and adjust in 10-second intervals as needed to avoid over or undercooking.
  • Use vanilla-flavored Greek yogurt to boost flavor in both cake batter and frosting options.
  • Toppings can be customized with cream cheese or Greek yogurt combined with protein powder and sweetener.
