Middle Eastern Nachos

Middle Eastern Nachos are a fun appetizer, snack or light dinner with pita chips, hummus, feta, olives and more.

Ingredients

Tzatziki Sauce:
  • 1/4 cup plain greek yogurt
  • 1/4 cup chopped cucumber
  • ½ T lemon juice
  • ½ Tablespoon parsley or mint or dill
  • 1 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Nachos:
  • 8 ounces Pita chips
  • 10 ounces hummus
  • 1 cup cucumber chopped
  • 1 cup tomatoes chopped
  • 1/2 cup crumbled feta
  • 1/2 cup chopped olives
  • chopped red onion to taste optional
  • 2 T chopped parsley or cilantro

Instructions

    Cup of Yum
  1. Combine Tzatziki Sauce ingredients. Set aside.
  2. Spread pita chips on a serving dish.
  3. Top pita chips with hummus (see note). Sprinkle remaining ingredients on top.
  4. Serve immediately with Tzatziki Sauce.

Notes

  • To make spreading the hummus easier, I spooned it into a baggie, cut off the corner, then squeezed it over the pita chips.
