Middle Eastern Nachos are a fun appetizer, snack or light dinner with pita chips, hummus, feta, olives and more.

Ingredients
Tzatziki Sauce:
- 1/4 cup plain greek yogurt
- 1/4 cup chopped cucumber
- ½ T lemon juice
- ½ Tablespoon parsley or mint or dill
- 1 cloves garlic minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Nachos:
- 8 ounces Pita chips
- 10 ounces hummus
- 1 cup cucumber chopped
- 1 cup tomatoes chopped
- 1/2 cup crumbled feta
- 1/2 cup chopped olives
- chopped red onion to taste optional
- 2 T chopped parsley or cilantro
Add to Shopping List
Instructions
- Combine Tzatziki Sauce ingredients. Set aside.
- Spread pita chips on a serving dish.
- Top pita chips with hummus (see note). Sprinkle remaining ingredients on top.
- Serve immediately with Tzatziki Sauce.
Notes
- To make spreading the hummus easier, I spooned it into a baggie, cut off the corner, then squeezed it over the pita chips.
