Mini Donut Muffins Recipe
Mini Donut Muffins are small baked treats made from a simple batter of sugar, margarine, milk, baking powder, and flour. Baked in mini muffin cups until lightly golden, they are then dipped in melted margarine and rolled in a cinnamon-sugar mixture to give a sweet, spiced coating reminiscent of classic donuts, but with a tender, cakey texture.
Ingredients
- 1/2 cup white sugar
- 1/4 cup margarine melted
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- For topping:
- 1/4 cup margarine melted
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 375 degrees F. Grease 16 mini-muffin cups.
- Mix all the ingredients together. Do not overmix.
- Fill the mini muffin cups about half full.
- Bake in the preheated oven until the tops are lightly golden, 10 to 15 minutes.
- While muffins are baking, place melted margarine in a bowl. In another bowl, mix together the sugar with the cinnamon.
- Once the muffins are done, allow them to cool slightly so you can handle them. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture.
- Let cool completely and serve.
