Mini Lemon Poppyseed Muffins

Ingredients

  • ½ cup unsalted butter melted and cooled
  • 2 eggs at room temperature
  • ½ cup lemon yogurt
  • 1 ¼ cup milk
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 3 cups all purpose flour
  • 1 ¼ cup granulated sugar
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons poppy seeds

  1. Preheat the oven to 350 degrees line your mini muffin pan with mini muffin cups.
  2. In a medium bowl whisk together flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the butter, sugar, eggs, milk, lemon yogurt, lemon juice, and lemon zest. Stir the wet ingredients into the dry ingredients until just combined. Stir the poppy seeds into the batter.
  3. Place the batter into the muffins cups, bake for 20 minutes. Cool for 5 minutes in the pan then transfer to a wire rack to cool completely.
