Mini Quiche Wonton Cups

Mini Quiche Wonton Cups feature individual baked bites made by layering chopped spinach and crumbled feta cheese in wonton wrappers, then filled with an egg and milk mixture and baked until puffed and golden. Ingredients

  • 1 TBSP milk (coconut milk, almond milk, or regular milk)
  • 5 wonton wrappers
  • 1-2 TBSP spinach chopped, fresh
  • 1-2 tsp feta cheese crumbled
  • ⅛ tsp garlic powder
  • salt to taste
  • black pepper to taste
  • 1 egg large

  1. These are the measurements and instructions for just a few wonton cups for breakfast. Need more servings? Simply double, triple, or quadruple the recipe as needed! It's very flexible and you can add any extras your heart desires.
  2. Preheat oven or toaster oven to 375°F.
  3. Gently place wonton squares in a mini-muffin tray + spray with olive oil.
  4. Crack an egg into a coffee mug and beat with a fork.
  5. Add milk (dairy or non-dairy).
  6. Depending on your preference, you can toss the spinach into your beaten egg + milk mixture raw or sautee it in a small skillet with some olive oil and garlic until wilted (this is such a quick + easy method that I always take the extra step!). Toss a lil bit of spinach (tomato or jalapeno would rock too), garlic and feta into the bottom of each cup and top with egg mixture.
  7. Bake for approx 8-10 minutes or until quiche mixtures fluffs up into a “muffin-top” and the edges of your won-ton cups are toasty + golden brown.

Notes

  • The recipe is flexible; multiply ingredient amounts to prepare more than five mini quiches as needed.
  • For a milder spinach flavor, sauté the spinach with garlic before adding it to the cups.
  • Variations such as adding tomato or jalapeno to the filling offer flavor customization.
