Mini Strawberry Breakfast Cake

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter softened, unsalted, 2 oz
  • 1/2 cup granulated sugar plus 1 teaspoon for topping, 100g
  • lemon zest from 1/2 lemon (about 1 teaspoon
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk
  • 1 cup strawberry fresh, chopped

Instructions

  1. Preheat your oven to 350°F and lightly grease a 7x5-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a medium bowl, combine butter and 1/2 cup of the sugar. Beat until light and fluffy, 1 to 2 minutes.
