Instructions

    Cup of Yum
  1. Preheat the oven to the temperature specified on the box.
  2. Line a 9" x 9" or 9" x 13" pan with foil, leaving an overhang on the sides. Coat with cooking spray.
  3. Prepare the brownie mix with the eggs, oil and water as called for on the package. Stir in the mint extract.
  4. Bake according to package directions. Let the brownies cool completely.
  5. For the mint layer. Place the 1/4 cup butter and cream cheese in a bowl, then beat until smooth with a mixer. Add the 1/4 cup of heavy cream and beat until well blended.

  9. Remove the chocolate topping from the heat. Let sit at room temperature for about 8-10 minutes or until lukewarm.
  10. Pour the chocolate topping over the mint layer. Refrigerate until set, about 45-60 minutes.
  11. Use the foil overhang to lift the brownies out of the pan. Cut into squares and serve.

Notes
