Mint Chocolate Chip Cake

A delicious moist and tender chocolate cake layered with a mint chocolate chip buttercream and topped with a mint chocolate ganache. This is a wonderful cake and perfect for the holidays!

Ingredients

  • 1 (13.25-ounce) prepared chocolate cake mix
Mint Chocolate Chip Buttercream
  • ¾ cup unsalted butter
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon peppermint extract
  • 3 drops green food coloring
  • ½ cup semi-sweet chocolate chips mini
Mint Chocolate Ganache
  • 1 ½ cups semi-sweet chocolate chips
  • 6 tablespoons unsalted butter, softened
  • ¼ teaspoon peppermint extract

Instructions

  1. Prepare 1 (13.25-ounce) prepared chocolate cake mix according to package directions. Bake in a 13 x 9 x 2-inch baking pan. Let the cake completely cool before frosting.
Mint Chocolate Chip Buttercream
  1. In a large bowl, add ¾ cup unsalted butter and 3 cups powdered sugar. Using an electric hand mixer beat together until smooth.
  2. Add 2 tablespoons milk, ½ teaspoon peppermint extract, and 3 drops green food coloring.
  3. Fold in ½ cup semi-sweet chocolate chips then frost the top of the cake.
Mint Chocolate Ganache
  1. In a microwave-safe bowl add 6 tablespoons unsalted butter, and 1 ½ cups semi-sweet chocolate chips.
  2. Microwave in 30-second intervals and stir until smooth. Add in ¼ teaspoon peppermint extract.
  3. Pour the ganache on top of the frosting and use a knife to smooth it out evenly. Slice and enjoy!
