Ingredients

  • 6 cups mint chocolate chip ice cream or 48 oz store bought ice cream
  • 40 Thin Mints
  • 4 tablespoons butter melted
  • 1 cup Whipped Cream or 8 oz Cool Whip
  • 2 tablespoons dark chocolate syrup

Instructions

  1. Take your ice cream out and allow it to sit at room temperature until it has started to soften.
  2. Place 35 thin mint cookies into your food processer or blender, pulse until you have fine crumbs. Mix in the melted butter. Press the mixture into a 9-inch springform pan or pie pan.
  3. Add the ice cream to the pan and spread it into an even layer.
  4. Top the ice cream with the cool whip.
  5. Crumble the remaining cooking into smaller chunks and sprinkle them around the edge of the pie.
  6. Drizzle the chocolate over the top of the cool whip.
  7. Place the pie into the freezer for at least one hour to set up.
