Mint Chocolate Chip Smoothie
This Mint Chocolate Chip Smoothie blends almond milk, almond butter, cauliflower rice, chocolate protein powder, baby spinach, chia seeds, cocoa powder, and fresh mint leaves into a creamy and mildly textured drink. Cacao nibs add a slight crunch, and optional dates provide natural sweetness if desired. It offers a refreshing chocolate-minty flavor with a hint of green earthiness, making it suitable for a nutritious and flavorful smoothie option.
Ingredients
- 1 1/2 cups almond milk cashew or coconut milk, unsweetened
- 1-2 Tablespoons almond butter or coconut butter
- 1/2-1 cup cauliflower rice frozen
- 1 coop chocolate protein powder
- handful baby spinach
- 1 Tablespoon chia seeds
- 1/2 Tablespoon cocoa powder or cacao
- 4-5 leaves mint or 1-2 drops of peppermint extract, fresh
- 1-2 Medjool dates (optional)
- 1-2 teaspoons cacao nibs
- granola for topping (optional)
Instructions
- Blend: Place all ingredients except cacao nibs and granola in a high-powered blender and blend until smooth.
- Add: Mix in cacao nibs and blend a couple seconds more.
- Serve: Pour into a glass, sprinkle with granola and cacao nibs and enjoy!
Notes
- If your chocolate protein powder is unsweetened, consider adding 2 Medjool dates or a teaspoon of maple syrup or honey for sweetness.
- Feel free to include additional superfood ingredients as preferred to enhance nutrition.
