  • 1/2-1 cup cauliflower rice frozen
  • 1 coop chocolate protein powder
  • handful baby spinach
  • 1 Tablespoon chia seeds
  • 1/2 Tablespoon cocoa powder or cacao
  • 4-5 leaves mint or 1-2 drops of peppermint extract, fresh
  • 1-2 Medjool dates (optional)
  • 1-2 teaspoons cacao nibs
  • granola for topping (optional)

Instructions

  1. Blend: Place all ingredients except cacao nibs and granola in a high-powered blender and blend until smooth.
  2. Add: Mix in cacao nibs and blend a couple seconds more.
  3. Serve: Pour into a glass, sprinkle with granola and cacao nibs and enjoy!

Notes

  • If your chocolate protein powder is unsweetened, consider adding 2 Medjool dates or a teaspoon of maple syrup or honey for sweetness.
