Miso Maple Glazed Salmon

Ingredients
- 2 tablespoons miso paste, any type
- 2 tablespoons pure maple syrup
- 2 teaspoons rice vinegar
- 1 teaspoon low sodium soy sauce (or tamari if gluten free)
- ½ teaspoon sesame oil
- 4 salmon fillets (about 5 ounces each)
- Optional garnishes: sesame seeds, chopped scallions
Instructions
- Preheat oven to 425 degrees F.
- Mix the miso paste, maple syrup, vinegar, soy sauce and sesame oil together in a bowl until smooth. If needed, add a small amount of water.
- Place the salmon fillets on a baking sheet lined with aluminum foil. Brush the glaze on top of the salmon. Place the baking sheet on the top rack in the oven and cook 8-10 minutes until salmon is just cooked through. Turn the broiler on high and broil the salmon for another 2 minutes until it is browned in spots. Garnish salmon with sesame seeds and scallions, if desired.

Notes
- Keep a close eye on the salmon when you put it under the broiler at the end. If left too long, the miso glaze can burn.
- For the same reason, line your sheet pan with aluminum foil- it will make for easier clean up.
- The salmon is done if the flesh flakes easily when you press down on it gently with a fork.
