Ingredients

  • 2 tablespoons miso paste, any type
  • 2 tablespoons pure maple syrup
  • 2 teaspoons rice vinegar
  • 1 teaspoon low sodium soy sauce (or tamari if gluten free)
  • ½ teaspoon sesame oil
  • 4 salmon fillets (about 5 ounces each)
  • Optional garnishes: sesame seeds, chopped scallions

Instructions

    Cup of Yum
  1. Preheat oven to 425 degrees F.
  2. Mix the miso paste, maple syrup, vinegar, soy sauce and sesame oil together in a bowl until smooth. If needed, add a small amount of water.
  3. Place the salmon fillets on a baking sheet lined with aluminum foil. Brush the glaze on top of the salmon. Place the baking sheet on the top rack in the oven and cook 8-10 minutes until salmon is just cooked through. Turn the broiler on high and broil the salmon for another 2 minutes until it is browned in spots. Garnish salmon with sesame seeds and scallions, if desired.

Notes

  • Keep a close eye on the salmon when you put it under the broiler at the end. If left too long, the miso glaze can burn.
  • For the same reason, line your sheet pan with aluminum foil- it will make for easier clean up.
  • The salmon is done if the flesh flakes easily when you press down on it gently with a fork.
