Ingredients

  • 2 tablespoons apple cider vinegar , or rice vinegar
  • 1 garlic grated or minced, small clove
  • 2 tablespoons White miso paste , use gluten-free miso if you need to
  • ¼ cup tahini paste
  • 1 tablespoon ginger grated fresh
  • 1 tablespoon maple syrup
  • ½ tablespoon soy sauce , or coconut aminos for a soy-free dressing
  • ½ tablespoon sesame oil toasted, optional
  • 2 tablespoons water more as needed, cold
  • salt or more to taste, a pinch
  • 1 teaspoon sesame seeds to serve, toasted, optional

Instructions

  1. Add the vinegar and grated garlic clove to a medium-sized bowl. If you have time, allow the garlic to mellow in the vinegar for 5 minutes before continuing with the recipe.
  2. Add the tahini paste, miso paste, grated ginger, maple syrup, soy sauce and sesame oil (if using). Whisk together until everything is well combined. Don't worry if the mixture seizes up – the next step will sort that out.
  3. Add cold water one tablespoon at a time, whisking as you go. Keep adding water until you get a creamy yet pourable consistency – you'll likely need 2 tablespoons of water.
  4. Taste and adjust the seasoning with a pinch of salt for a savoury boost, and serve. If you're serving the dressing in a bowl, sprinkle it with toasted sesame seeds for visual contrast and a pleasing crunch.

Notes

  • Store the dressing in an airtight container in the refrigerator for up to one week.
  • If the dressing thickens after chilling, whisk in a small amount of water to thin it.
  • Reserve sesame oil to drizzle on top or omit it for an oil-free dressing option.
