Miso Tahini Dressing
Description
This dressing combines fermented white miso and sesame-based tahini paste to deliver a rich, umami-forward base. Apple cider or rice vinegar and freshly grated garlic provide brightness and pungency, balanced by maple syrup's sweetness. Grated fresh ginger adds a sharp fresh note, and soy sauce contributes saltiness and depth. Optional toasted sesame oil enhances the nutty aroma.
Whisking the ingredients together initially may cause slight thickening due to the tahini, but gradual addition of cold water loosens the mixture to a creamy, smooth, and pourable consistency suitable for drizzling over salads or using as a dip. Sprinkling toasted sesame seeds on top adds textural contrast and visual appeal.
The dressing can be stored in an airtight container refrigerated for up to one week. If it thickens over time, whisk in a splash of water to restore desired texture. Omitting sesame oil yields an oil-free version while retaining most flavor.
Ingredients
- 2 tablespoons apple cider vinegar , or rice vinegar
- 1 garlic grated or minced, small clove
- 2 tablespoons White miso paste , use gluten-free miso if you need to
- ¼ cup tahini paste
- 1 tablespoon ginger grated fresh
- 1 tablespoon maple syrup
- ½ tablespoon soy sauce , or coconut aminos for a soy-free dressing
- ½ tablespoon sesame oil toasted, optional
- 2 tablespoons water more as needed, cold
- salt or more to taste, a pinch
- 1 teaspoon sesame seeds to serve, toasted, optional
Instructions
- Add the vinegar and grated garlic clove to a medium-sized bowl. If you have time, allow the garlic to mellow in the vinegar for 5 minutes before continuing with the recipe.
- Add the tahini paste, miso paste, grated ginger, maple syrup, soy sauce and sesame oil (if using). Whisk together until everything is well combined. Don't worry if the mixture seizes up – the next step will sort that out.
- Add cold water one tablespoon at a time, whisking as you go. Keep adding water until you get a creamy yet pourable consistency – you'll likely need 2 tablespoons of water.
- Taste and adjust the seasoning with a pinch of salt for a savoury boost, and serve. If you're serving the dressing in a bowl, sprinkle it with toasted sesame seeds for visual contrast and a pleasing crunch.
